Oh My!!!!

I don't know if I should laugh or cry.... and this was after I gave 6 away. Note to self: Plant less yellow squash. I don't even know what to do with it! It's not like zucchini that can be shredded and frozen for later. Any ideas??????

    It is yummy and easy to make full of veggies! I think I usually end up fiddling with the measurements and seasonings for the sauce, but it is one of my favorite dishes to use garden produce!

  2. We have gotten a ton of crook neck squash too! It seems to make it's way into all our meals lately some how. I really like it with onion, I think it brings out the flavor. We had tin foil dinners the other night with ground beef patty, crookneck, carrots, potatoes, cherry tomatoes and onion with kosher salt and ground pepper. It turned out sooo stinking good. I did cook the veggies to crisp tender in the skillet before in some olive oil so it wouldnt take all day. lets see I put it in our spaghetti, any pasta I guess. Also I learned you peel it, I guess you probably know that. I didn't :) Now what can I do with a million jalapenos!!?? you could chop it up and freeze the squash. Ya know just like any frozen veg side??
