Pumpkin Scones
2 cups flour
½ cup brown sugar
¼ tsp ground ginger
½ tsp nutmeg
¼ tsp allspice
½ tsp cinnamon
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup cold unsalted butter
1/3 cup buttermilk (1 cup buttermilk can be made by adding 1 tsp lemon juice to 1 cup milk—adjust amount as needed)
½ cup pumpkin
1 tsp vanilla
½ cup white chocolate chips
Mix together flour, sugar, spices, baking powder, baking soda, and salt in a large bowl. Cut butter into pieces and cut into flour mixture until it resembles coarse crumbs. In a separate bowl, mix together the pumpkin, buttermilk, and vanilla. Add to flour mixture and mix until the dough comes together (don’t over mix). Add white chocolate chips.
Transfer to a lightly floured surface and knead gently 3-4 times, then shape/pat into a circle about 1 ½ inches thick. Slice in half, and then cut each half into 4 equal pie shaped wedges (8 scones).
Bake on a cookie sheet at 375 for 20 minutes, or until toothpick some out clean. Pour ginger glaze over the scones while they are cooling.
Ginger Glaze
2 cups powdered sugar
¼ tsp ginger
3 tbsp milk
1 tsp vanilla
Whisk ingredients until smooth.

OOooo those look yummy. I love pumpkin anything. I made pumpkin chocolate chip muffins for yw's tonight. They were dang good if I do say so. Good thing I didn't come home with any extras!
ReplyDeleteI have a rule about baking: I don't do it unless I plan to share. period. Or guess who eats it all? That's right...ME! And that is no bueno!
